STORING YOUR TRUFFLES

FRESH :

The Truffle can be kept for 10 days in the refrigerator in an airtight container (jar or box), in which absorbent paper has been added beforehand. It is necessary to change this paper every two days in order to limit the accumulation of humidity, which will increase the longevity of the truffle.
Wash and brush the truffle under fresh water only before eating it.


FROZEN :

First of all, you have to wash and brush the truffle under a net of cold water then dry it. Next, wrap each truffle in cling film and put it in the freezer in a glass jar or airtight box.

The most important thing with frozen truffles is to grate them frozen. By not defrosting it, you can put the rest of the truffle back in the freezer and you won't eat a soggy truffle.
